What is Mosli- Tunisian chicken and vegetable stew?

Mosli, chicken, and vegetable stew is a traditional and popular dish in Tunisia. It’s easy to make, and that’s one of the reasons why it’s great everyday food. Mosli is a stew that is made of chicken and various vegetables. Numerous spices give a delicious taste to this dish. I promise you that the scent of the dish is really aromatic. There are a couple of versions of mosli, the one with a chicken is the most popular. In the other versions, the chicken is replaced with lamb or fish.

Needed ingredients for Mosli

To cook mosli requires only a few ingredients, and most of those are very common ones. Check the list of the ingredients below, and feel free to modify it for your own needs.   

Chicken: breast, drumsticks, or thighs. I like to use both chicken breast and drumsticks because the cooking time is about the same. If you want to use thighs, cut them into smaller pieces.   

Vegetables: potatoes, onions, green peppers, tomatoes, and garlic. In Tunisia, the green peppers are spicy ones that bring heat into this dish. If you like to add heat to your Mosli, try using the Anaheim peppers. If the hot green peppers are not for you, use green bell peppers instead.   

Spices: salt, black pepper, turmeric, hot paprika powder, dried thyme, chili flakes, and tabel. This spice mix will create an amazing flavor and scent in the dish. Turmeric is mandatory for this dish, so do not skip it. A great substitute for dried thyme is dried oregano, rosemary, basil, or herbs de Provence mix. Olive oil: Use high-quality olive oil.   

Garnish: chopped red onion and parsley.

Serve with: fresh baguette.

Recipe for Mosli – Tunisian chicken and vegetable stew

Servings: 4-5  

Total preparation time: 1 hour  

Ingredients for Mosli- Tunisian chicken and vegetable stew

500 g chicken breast, drumsticks, or thighs  

3 potatoes, peeled and cut in halves  

1 onion, peeled and cut in half or wedges  

1-2 tomatoes, cut in wedges  

2 Green peppers (Anaheim or green bell pepper), cut into pieces  

6 garlic cloves, peeled and crushed  

3 tbsp olive oil  

Spice mix:   

1 tsp salt  

1 tsp black pepper  

2 tbsp turmeric  

1 tsp chili flakes  

1 tbsp hot paprika powder  

2 tbsp dried thyme  

1 tsp tabel (optional)  

  

Garnish: chopped red onion and parsley  

Serve with: fresh baguette  

  

Cooking method for Mosli

1.Peel the potatoes and onions. Cut in half or quarter pieces (depending on the size of the vegetable)  

 

2. Peel the garlic cloves and crush them.  

 

3. Wash the tomatoes and green peppers and cut in half or smaller wedges.   

 

4. Place the chicken and cut vegetables into a baking casserole. Add crushed garlic and drizzle olive oil on the top. 

 

5. Measure all the spices into a small bowl and add 1 dl of water and mix well. Pour the spice mixture into the chicken and vegetable casserole. Mix well that all the pieces are thoroughly coated.   

 

6. Add hot water into the casserole. The water should cover about three-quarters of the casserole.   

 

7. Cover the casserole with the foil and bake in the oven at 200 degrees C for 40-50 minutes. At the end check that vegetables are softened, and chicken is cooked.  

 

8. Garnish the dish with chopped red onion and parsley. Serve with fresh baguette
